Walnut Bars

Every once in a while I listen to my husband. 

Every once in a while I even make something that he requests.

Sometimes it takes me a while. A long while.

Like 28 years!

Finally I made them.  His Aunt Charlotte's Walnut Bars.

They are very easy to make. They are very rich. They are very fattening. They probably aren't very good for you. But they are very, very good to eat. (Or so I am told. I'm allergic to nuts so I can't claim first hand knowledge - let me know what you think).


Crust:
1 &1/2 cups butter
3/4 cup sugar
3 cups flour
3/4 cup corn starch

Cream the butter and sugar together, mix in the flour and corn starch.  Using
your hands spread onto a large cookie sheet/jelly roll pan.  Bake for 15 minutes at 300 degrees.

Meanwhile, combine:
4 eggs
1 box (yes, one box that's one pound!) of brown sugar
4 tablespoons flour
1/2 tsp baking powder
2 teaspoons vanilla
2 cups chopped (fairly large pieces) and lightly toasted walnuts
1 cup coconut
Spread evenly over baked crust.
Bake 30 minutes at 300 degrees

Cool and ice with:
1/2 cup butter
8 ounces regular cream cheese
1 box (yes, another box) powdered sugar

Cut into 1x2 inch bars

  1. These look sooo good! I've been to the store twice today, but I may just go back in the morning to get the ingredients for these. I'll let you know how they turn out!
